I use this wonderful, inexpensive knife for slicing veggies, fruits, fish, and meat without bones. The knife is light and easy to handle. The blade is very thin but strong, though you might not want to try to cut a pumpkin or a butternut squash or anything with bones with it—anything else is fine. (Meat bones or chicken bones might nick or chip the blade and almost certainly would dull it.)The knife does especially well with very thin (or regular) slicing of vegs and fruits. Despite owning some very expensive Global knives, I also choose this Kiwi knife to cut cooked tuna steaks into 1/4 inch slices with very clean edges—try doing that with your regular kitchen knives!I have bought these knives for myself and to give to others as gifts, with which I always include a warning to be careful when opening package and using because these knives are really that sharp. I am so pleased with this knife that I will probably get a Kiwi paring knife, which is also surprisingly inexpensive.I have two quibbles that don’t keep me from giving a 5-star rating: 1) a small paper label is glued to the wooden handle and is somewhat challenging to remove; and 2) the handle has only a very thin waterproof coating.Tips: Obviously a knife with a wood handle is likely to suffer from being put in a dishwasher, so don’t. It’s quick and easy enough to hand wash and dry this knife with a cloth or paper towel; just be careful of the sharp edge of the blade. (Did I say this knife is sharp?)Disclosure: I am a home cook and don’t have any relationship with the Kiwi knife company or Amazon.
